Entree:                      Pinot cured Atlantic salmon, seared tuna,

                                    and smoked ocean trout mousse


 

Fish Course:            Catch of the day" Barramundi or Kingfish, saffron                                           pilaf, parsnip coulis, citrus steamed vegetables


 

Main Course:          Shiraz turkey and pork fillet in prosciutto, French                                       potato cake, caramelized vegetables, roasted Swiss                                   mushrooms, Shiraz pickled fruits


 

Dessert:                   Quandong Shiraz chocolate mousse, red wine crème                                brûlée, Shiraz parfait, chocolate ganache
